Guacamole
Avocados are a wonderful source of healthy monosaturated fat as well as loaded with Vitamin K, Potassium, and Vitamin E.
START TO FINISH: < 10 MINUTES
MAKES: GENEROUS 1 1/2 CUPS
SERVES: 4 TO 6
2 ripe avocados
1 large garlic clove
2 tablespoon white onion
1/4 cup cilantro, loosely packed, leaves only
2 tablespoons avocado oil
juice of half a lime
salt and pepper to taste
1/4 cup seeded and chopped tomato
Garnish: lime wedge and cilantro leaves
1. In a food processor, add the garlic, white onion, cilantro leaves, and pulse until chopped.
2. Slice the avocados in half and remove the seed. Using a spoon, remove the flesh of the avocado, and add to the food processor. Pulse the mixture until a creamy consistency is reached. Add the avocado oil, lime juice, salt and pepper. Pulse the mixer a few times just until incorporated.
3. Remove the blade of the food processor. Fold in the chopped tomatoes.
4. Transfer to a serving dish and garnish with a lime slice and a few cilantro leaves. Serve with fresh vegetables such as peppers, carrots, and celery.
